THE MOTHER OF OUR DOUGH

The key ingredient of taste and genuineness of any specialty baked at Matrem is Mother Dough (Pasta Madre), the real queen of the dough. Mix of simple ingredients, like water and flour plus one our “secret” ingredient boosts up spontaneous fermentation. It’is Mother Dough that makes our products highly digestible and incredibly tasty! The origins of Mother Dough are very ancient: the first historical note goes back to 10.000 years ago, to the period of ancient Egypt. Behind giving a historical touch to our dough, we caress it even more by giving rest and fermentation for 48 hours! Could it be not so good?

Every ingredient has been thoroughly selected and comes from the best gastronomic areas of Italian tradition, for example, Olive oil Extra Vergin, comes from Tuscany, Chiusi-Chianciano; Mozzarella di Bojano, Molise region; Mortadella di Cinta Senese, from Siena, Tuscany; Alice di Cetara – anchovies that come from Cetara, town near Salerno, Campania region; Jams and marmalades come from Sorrento peninsula; Piennolo tomatoes – delight from Campania region; Pistachio di Bronte, Sicily; and Porchetta di Ariccia – roasted pork from Ariccia, province of Rome. Add a generous dose of passion and creativity to those ingredients, and you’ll get unique recipe, the result of continuous research and experimentation.
